Claus is working with food safety and risk analysis at the Danish Agricultural & Food Council: He is focusing on facilitating the development of coherent and risk-based approaches to food safety management. In doing so, he is deeply involved in related international activities in Codex, IDF and ISO.
He has chaired numerous activities of the IDF including all input to the Codex Committee on Food Hygiene since 1998. From 2008 to 2011 he served at the board of IDF as chair of the SPCC (Scientific Programme & Coordination Committee). Claus Heggum joined the SPCC again in 2015 representing hygiene and food safety
Claus was promoter of establishing the ISO 22000 on food safety management systems and is still involved in developing the ISO 22000 series. He has contributed to the development of many Codex standards, including the Code of Hygienic Practice for Milk and Milk Products, International Microbiological Criteria for Listeria monocytogenes and Cronobacter sakazakii, Guidelines for the Establishment and Application of Microbiological Criteria, Guidelines for the Validation of Food Safety Control Measures and Guidelines for the Conduct of Microbiological Risk Management.
